Licenciado en Ciencias Químicas, en la especialidad de Bioquímica, por la Universidad Complutense de Madrid y realizó la tesis doctoral bajo la dirección del Profesor Theo Konijn en la Universidad de Leiden en Holanda. Ha sido investigador en la Universidad de Basilea, en el Hospital Universitario Fundación Jiménez Díaz de Madrid, en la Universidad de Chapel Hill en Carolina del Norte, la Universidad de Pensilvania en Filadelfia y en los Institutos Nacionales de la Salud de los Estados Unidos. José María Mato ha sido presidente del Consejo Superior de Investigaciones Científicas (CSIC) y catedrático de la Universidad de Navarra. En la actualidad es profesor de investigación del CSIC y director general de los centros de investigación Biogune en Bizkaia y Biomagune en Gipuzkoa. Entre sus principales contribuciones científicas destaca el descubrimiento de la deficiencia de adenosilmetionina como una de las causas de la enfermedad del hígado graso, la cirrosis y el cáncer de hígado. En 2004 recibió el Premio Nacional de Investigación en Medicina por sus contribuciones al campo de la hepatología.
